Because we use materials that will not endanger wine or humans once placed in a chilled environment. Did you know glass is permeable? Certain woods, finishes, paints, etc. can taint the wine. When placed in a closed loop system like a wine chiller you could enclose all the off-gassing from the wine rack materials.
